We don't? Fat Tuesday is a specific day. If you mean why do we use the French translation of Fat Tuesday to refer to the entire season, well, why do you use "Christmas" to refer to the entire December holiday season?

Because the Lenten season starts on Ash Wednesday. You get all of your debauchery in on Tuesday, thus Fat Tuesday.
