Whether I wanted to post in here or not
But now that you're asking, do I skip San Simeon/Hearst Castle and go directly to San Luis Obsipo? It's a fricking 3 hour detour around Big Sur inland

Excellent. About 10 years ago I was on a competitive KCBS team with some friends. I did the ribs, butts, and made our BBQ sauce. But one thing I never fooled with was chicken. I let one of the other guys focus on chicken (the other was our brisket guy) because I never could get it right. I was great at what I did, but Chicken was just something I never felt comfortable doing.
How do you do yours?

The correct kind. So, this person is screwed trying to get good advice on TD.
My advice is, if it smells like cologne, leave it alone. I hope this helps the advicee. You're welcome.

I will brine the quarters or whole fryers overnight. A few hours before putting on ill pat them dry and put on a dry rub. Smoke until done. Always come out super juicy and tender.
I smoke alot of pork butts also. Smoking is by far the cheapest and tastiest way to cook your meals.
