Always smoke it myself. Just bought some bone-in leg quarters from rouses for .79/lb to smoke tomorrow.

Excellent. About 10 years ago I was on a competitive KCBS team with some friends. I did the ribs, butts, and made our BBQ sauce. But one thing I never fooled with was chicken. I let one of the other guys focus on chicken (the other was our brisket guy) because I never could get it right. I was great at what I did, but Chicken was just something I never felt comfortable doing.

How do you do yours?

The correct kind. So, this person is screwed trying to get good advice on TD.

I will brine the quarters or whole fryers overnight. A few hours before putting on ill pat them dry and put on a dry rub. Smoke until done. Always come out super juicy and tender.

I smoke alot of pork butts also. Smoking is by far the cheapest and tastiest way to cook your meals.
