Some kind of dark roux'ed soup restaurant, centered around the trinity, andouille, chicken and shrimp. Maybe add rice? Yeah, brown rice to show we are not one of those racer establishments.

I guess it probably wouldn't work because no one does it but I would like to open a place that prepared a big pot of gumbo one day, spaghetti the next and so on. Cornbread, french bread or garlic bread for sides with sauteed vegetables or such each day. No other options available.

There is a mom and pop that does this near us but with different meals. They are delicious and reasonably priced. You have to have a reservation and they sell out every weekend. Menus are posted on FB weekly (and maybe emailed).
