Took jalapeños and hollowed them, cooked shrimp and then diced them up. Mixed the shrimp in cream cheese, a 3 cheese blend and some Chipotle sauce.
Stuffed that into the jalapeños and then continued roasting them till done.
Usually would wrap them in bacon but didn't have any.
