Im not the biggest fan of really dark roux.

A lot of times it is just burnt roux.

Edt: I would trust you and uncle.t00fs dark roux.

must be a down the bayou thing a lot of times it is burnt - but my maw maw always had me practice when I’d go over - so mine is good

This is an oven roux so no burning it unless you let it go too long

Yeah most of the time I find dark rouxs are just burnt rouxs.

Yeah dark roux is a vv down the bayou thing.

I find thibodaux ppl did their roux a little too light (sometimes still tastes like flour). Im not bragging on Chackbay but Chackbay ppl make a better roux. But I also grew up on that medium colored roux, so a little bias.

Yeah, you’re definitely walking a tight rope making it that dark, I’m not against it but I will never make a roux that dark unless it’s for rabbit or squirrel. Or even duck
