The meat is actually very good, the problem is they are very bony and hard to clean.

1st thing i noticed, its funny the guys getting slapped in the face by the first.

2nd thing i noticed, they need to put into the budget for bigger nets

Let’s make an Asian Carp cleaning machine.
Make each piece of meat into a fish rib.

“Get your fish ribs here”
Fried fish rib
Baked fish rib
Broiled fish rib
Steamed fish rib
BBQ fish rib
Slow smoked fish rib

FYI, I was hit by one flying in the spillway running 30 mph in the chest. That is a wake up call and they stink.
