A lot of it depends on how long you usually keep your hair. Use an 8 on top and a 6 on the sides to start if you're afraid of cutting it too short. If an 8 cuts it too short, you can order a 10 and 12 guard combo off Amazon. Wahl has some videos on their site you can watch.

It is funny my grandfather who lived close to New Iberia use to give us the New Iberia hair cut when my cousins and I were in elementary school.
Serious he put a bowl on our hair to cut the front level and shaved the rest of our hair like a crew cut.
He use to joke and would say we were ready to go to the movies in Lafayette to see the ladies.

I never got it as the hair cut was bangs straight down in the front and short everywhere else. Then people later called it the New Iberia haircut and now I get it.
