Generally it's because the restaurant runs the bill amount through first and then reconciles tip amounts later. The bill amount hits your statement first.

It’s easy to hit no tip. They won’t care as they know they aren’t serving you.

I avoid eating with coworkers that dont tip. They are well paid and would tip $1-2 for 2 people.

I see vids of Hooter's girls making 500-1000 a night. IDK how patrons can afford to tip so much.

Depending on the relative price and effort I’ll tip a dollar for counter type service. I get simple drip or pour over from Starbucks so I tip $0-$1.

When they run the card is only going to have the pretip amount. Then after you sign they add in the tip on the system. It usually doesn't show up until it's no longer a pending charge on your bank.
Sort of how if you use a debit card for gas you get charged $100 while pending then the actual amount show up once cleared.
