I'm about 2 hrs from turning the watermelon in my fridge into a simple syrup I can use for drinks this weekend. I'd be better if I had the drink in hand, but it's not far away.

was able to reschedule several patients so that I can take the day off today.

Not that it's a day off mind you, just been too busy with actual work to do work around the house.

Nurse

4 cups seedless watermelon, run through blender and pour through strainer.

Put 2 cups of strained juice in a pot and bring to a simmer. Add in 1 cup of sugar/sugar alternative. Stir until dissolved and it coats the back of a spoon.

Pour through strainer and let cool to room temp.

Longest wait is letting it cool. Hardest part is cleaning the blender and strainer.

Have also made with blackberries, lemons, and of course pineapple before as well. With other fruit I normally add 1-2 cups of water and just take longer with the simmer to thicken up the syrup. Lemon takes some extra sugar vs the other fruits which have a higher natural sugar content.

I saw someone put watermelon in a bucket, then add hot water, sugar, and yeast. They called it watermelon crawl.
