Tanks Ben. I was a gun bunny not FDC (fire direction control) They were really good at math not me. I ran out of toes and finger way to early.

Certainly nothing revolutionary...Low and slow on the temp and time. I always make sure to put the fat side up and use plenty of wood.

I plan on using 75/25 mesquite and hickory.

Pepe, I've never used an oil less fryer but I've heard great things. I love my smoker, though.

wrap it in foil after marination night long, put on cool side of smoker, and let it roast brother....shite we both from central....should have pork but's down pat ! lol
