Butter can last a loooong time on the counter just keep it covered. So much better.

In countries like Mexico, their milk does not require refrigeration because many places lack refrigerators. Their milk is 'ultra-pasteurized'... whatever that is...

That is correct. They naturally have a protective coating that works by sealing the shell's pores and preventing air from penetrating it, helping to keep bacteria out. Washing eggs removes that coating. As a result, washed eggs must be refrigerated to prevent contamination. Why ours are washed and the rest of the worlds isn’t and just sitting on a shelf next to the vegetables is something I haven’t found an explanation for.

It seems the US makes them more dangerous by removing the natural protective covering.

are we talking about the milk or the various fairlife protein shakes (ie Fairlife Nutrition Plan and Fairlife Protein Shake Powered by Core Power)? My impression is the milk product (ultrafiltered, pasteurized milk) has to be refrigerated, but the protein drink products are definitely shelf stable un-refrigerated for quite a long time until opened.

I think that's what they're talking about as well .... the chocolate milk Fairlife protein shakes. Those are shelf stable.

Fairlife protein shakes are the official protein shakes of the SEC. Whenever we have donor events they serve us all of those things we can drink. If you look around in all the locker rooms or walk around the common areas for athletes .... you'll see them drinking those everywhere. The kids love them. And yes, you're 100% correct, those don't have to be refrigerated. Good call.

My mom would take the butter out of the fridge every night before going to bed. After we used it for breakfast she would put it back in.
