LSU Dad, it’s cool I believe you brother. I am a relative of the Guillots from your way. Kenny made a mean brisket but the recipe is lost when he died. Be sure to write some of those recipes down
I hear you, we have three cookbooks published, two on my Moms side and one on my Dads.
As for the best brisket, a good friend of mine made the best. Haven’t found one better.
Take care Tut!

So you have a good source of crawfish in Georgia?

Fracking.
Definitely not fracking as there is no oil or gas production within fifty miles of the epicenter. (I'm not sure if there's still production up near Sneedville TN, if there isn't activity there, make that a hundred mile radius).
The rocks there are mostly metamorphic. Depending on how you believe the thrust faults are oriented, there may or may not be sedimentary rocks under the metamorphics.
As far as we know, this has no relation to the massive quake that damaged Charleston SC centuries ago.

We’ve been buying select crawfish for over 20 years, up here in Ga. Same guy. We had 5 of some of the best, I’ve seen in a while. We had 5 sacks, Hot Dogs and Burgers, with a number of sides. Nothing was left. Like I tell folks, up here when you tell folks, come hungry. They arrive with a fork, spoon and knife in their back pocket!
My friends own two restaurants up here.
If you make it around Woodstock, let me know! I’ll be here for another week or so.
I did call a friend from the board, to invite them, but they were up in Alaska on a cruise.

Wow, that’s pretty cool. I don’t really know which states have a taste for crawfish among their populations and a source to acquire them from. Cool to know that Georgia has them.
My wife has some family in the Atlanta area, so we’ll have to hit you up some time.

I know many of the restaurant owners in the town of Woodstock.
I have three sister that moved up here. I taught a couple how to peal and eat the mud bugs today, they were from Kansas. Lots of the friends up here, have grown accustomed to eating everything we boil.
