Depends what info you're talking about. They can get a lot of supposed information just from cold reading. They can play the percentages and expect that just anyone will have known, for example, a male loved one who has passed away and who was important to them. The "medium" can make general guesses about the deceased, such as his name starts with a certain letter (if they miss the first couple of times, they're still OK, just keep guessing common first initials until they get it right) or other things about them, e.g. "he was older and a relative". If wrong, then he just keeps guessing, "a friend?" "not older but seemed older because he was an "old soul" or was like a mentor?", or some shite like that. Just keep it general and he's bound to be in the ballpark on something eventually. The client then usually provides the rest of the information like the name, specific relationship, etc. and from there the "medium" can extrapolate more generalities that the client is only too happy crystallize into more specifics.
"He said there was some unfinished plans he had for/with you"--"why yes! he was supposed to come to my wedding, but he passed away before it!"--"Ah, he wants you to know that he was there watching over you and he was very happy for you".
The gullible client comes away thinking the medium knew too much about the deceased not to be really communicating with him. In fact, he knew nothing, but just made some educated general guesses and the client led the way to the information. It takes some work and some research to get really good at it, but it's not that hard.
