The internets say it's the worst week to go as far as crowds go . But, it's really our only option because of schedules. Is it really that bad? Should I do an all inclusive instead?

Yes it is that bad. One of the worst weeks to go to Disney.
Cue the Disney haters.

What do you mean "all inclusive"? You expect to avoid the crowds somehow?

I've been at New Years, which is another max crowd time of year. It really depends on what you want to get out of it. My suggestion would be to go early in the morning to ride a few rides, then use your fast passes. Head back to the hotel at lunch time to eat and hang out by the pool for the afternoon. Return to the park for dinner in the evening.
Remember that Disney is a fully featured resort. There are a ton of activities outside of the theme parks. You can golf, fish, and even take classes. Just think of it like camp and structure your days.

I've been 15+ times since childhood. My last trip was at Thanksgiving, and I will never be back then or Easter.
The prices are higher, and you'll spend most of your time standing in line for rides or busses.
That being said, if Easter is your only option, then go. You'll still have a great time.
Pay a little extra, and stay on Disney property (Art of Animation is the best value), and take full advantage of the extra Magic hours. The night time extra hours are the best - most young kids are crashing by 8:00, so the parks thin out.

I went the week after Easter this past April. Yes lines are long for every ride & people are everywhere.

Easter was on April 5th this year and I went to Universal Studios April 16-19 and the crowds weren't that bad at all. I think the longest line we waited in was 20 minutes. Although, some wait times were longer, like Minion Mayhem, but I had my birthday button and got to skip the line . If you are there for multiple days, you can do just about everything at Universal. Also, go to Orlando Informer to help plan you vacation to Universal. Disney on the other hand, can't help you out there. More of a Universal Studios guy

Discovery Cove is where it is at (adult and kids)!
