I'm assuming PCola is better/nicer than Mobile?
Yes and it is not even close.
I work in Mobile 3 days a week, Pensacola the other 2.
Pensacola is a great town with a lot of things to do.

Baldwin County is so much different from the rest of Alabama that it's almost a whole different state.
Except that you still have state income tax, still have fans of the University of Alabama that didn't graduate as the majority of the population, same governor, same laws, etc.
I agree the towns of Foley, Daphne, etc. are nice, but I'd still live in Gulf Breeze unless I was a Bama fan and its not even close.

I knew of an Air Products facility in Pace and a paper mill in Cantonment, outside of those two facilities I am not aware of anything else (but it has been 14 years since I lived there )
There's also a very small ExxonMobil plant and a chemical plant called Ascend Performance Materials in Cantonment. I had a project going there a few years back. Seems like a great place to work.
The time I spent in pcola was short but I imagine it's like any other town, it has its bad and good. I've heard good things about Pace from the guys I dealt with at the plant.

I live here now, and I was surprised by how much I love this place. Pcola is like the perfect size - big enough so that there's stuff to do, but not so big that it can be a challenge to live in (or raise a family in).
The beaches are nice, although fairly touristy during the summer (but you can go far enough down the beach and eventually find a less-crowded spot). Downtown and Palafox street is where it's at - tons of great restaurants and bars.
I'm actually a ChemE at one of the plants here. The area isn't bustling with opportunities like LA or TX, but they're there if you look. Pay may not be quiiiite as great as Houston or BR, but cost of living is low and the location beats the hell out of both those IMO.

Yea it sounds like what I'm looking for. I'm from NOLA and I've lived the post grad party life in NOLA. I'm kinda ready for something different for a few years, something a little quieter but still with stuff to do.
There are several job postings for process/manufacturing engineers at the plants, I just haven't pulled the trigger yet. I'm a process engineer with 4 years experience working with a design consulting firm, and I'm also trying to make the jump to work for an operator to get production engineering experience.

I work for a manufacturing facility in the area. Just relocated here and I love it. I'm a good deal older than you and your GF, but I don't think you would have a prob with finding things to do.
As to housing, be ready to pay property tax. No state income tax so it's not nearly as bad as Texas on that front. If you want something new you might have to look outside of the city.
I have no regrets moving here.

There are a good bit of plants from Sarahland north to McIntosh, plus the Airbus facility. Not sure what they would need a chem e for.
Bama Power
Thysseen Krupp
BASF
Olin
Airbus
Etc
