It’s not as easy as simply adjusting status. Original green card has a ton of conditions. You have to go back 2 more times to get more conditions removed. I think it takes around 3 years. So they have to stick it out that long to get a permanent green card.

I was assuming she had either a visitors visa or a "fiance" visa (which is simply just to get her in the country)

Once she marrys and files for adjustment of status why would she be required to leave?
