I know I don't have Napoleon's expertise, but I will say that If you have a Hoshizaki nugget (cubelet) ice machine installed under counter (built-in), it is very cumbersome to descale/sanatize on a schedule. It will require taking the unit out and a partial disassembly. I had a hard time finding someone to come to the house that knew what they were doing, so I had to do a good bit of work myself, and can't give a glowing rec here. I will say that nugget ice makers have a more complex mechanism to deal with however than cubes, top hat, etc

I had a Hoshizaki C-100BAF at my last house for 5 years, and had several tiresome issues. When we moved, I installed a Scotsman SCN60PA1SS nugget ice maker. I believe it was a tad less expensive than the Hoshizaki, though not much, but very easy to de-scale/sanitize/clean coils - doesn't require taking out from its install. Two years in with the experience on the Scotsman and no problems (residential application, family of 6).

I also prefer the ice from the Scotsman - the ice is just a tad softer to the tooth. Either way, make sure you install a filter, and make sure you maintain at least twice a year.

I have an Opal as well. Love that thing. Well worth the money because I use it non stop.
