Yes, certain unreimbursed expenses incurred during a mission trip can be tax deductible as charitable contributions, provided they meet specific IRS requirements. To be deductible, the services must be for a qualified charitable organization and the trip cannot have a significant element of personal pleasure, recreation, or vacation. The expenses must also be unreimbursed, directly related to the services provided, and expenses you had only because of the services given.
Deductible Expenses
If these conditions are met, you may be able to deduct expenses like transportation (air, rail, bus, or out-of-pocket car expenses), lodging, and meals. Other deductible costs can include taxi fares between the airport/station and accommodation.

The problem is, the IRS does not scrutinize claimed deductions as closely as they should.
My in-laws are all missionaries. They do go to some very inhospitable places. But they also take side trips for pleasure and write off some of the cost.
My father-in-law has actually asked me for copies of receipts for meals that I paid for at which he was present. He writes them off as "missionary discussion" even if we are simply celebrating someone's birthday.
