I'm not opposed to movies or series. My wife will be more likely to watch with me if its something newer, but that is just a bonus and not necessarily a needle-mover for me.
You don't have to be living in a box to have never seen Star Trek.
However, for star trek there is no beginning to start off with. The great thing about it is you can hop into any episode, watch it and get a good story and see the characters. The more episode you watch the more you get a grasp of what all the characters are like.
So with that being said, do you want to watch something like Episodic where one episode is unrelated to the other? Or do you want an epic storyline that keep track of everything they done in the past?
If you just want stand alone episodic content, I suggest you start with. TNG - Season 5 episode 2. It's a stand alone story that is engaging. After that you can continue onto season 5 like normal. If you feel like you like them and want to know more, start going through the older episode. The only thing that changed is the year, the episodes themselves are stand alone except for a few two parters.
Expect crazy and wacky shite to happen almost every episode. Yet thats star trek.
Now if you want a sci fi epic, Deep Space Nine is your speed. DS9 is single handled responsible for fleshing out the federation, and all the powers that be around them. The story is also told in chronological order culminating in an epic season finale.
It is also more grounded and less fantastical stuff happens on that show. For that show, I would start with season 3, thats when they found their legs and kick off the saga. Think of Season 1 and 2 as Prologues to the main story that start off with 3.
Don't worry, there is a bit of a recapped at the start of the season to get you caught up.

It’s very easy to get overwhelmed with information. There’s a lot out there, and Star Trek fans love to display their raw knowledge and opinions of the various shows.
I say keep it simple. If you want a START on Star Trek, just find a good list of the top ten episodes of the original series and watch those.
The original series is not hard to follow or understand and it is the “core” of Star Trek.
Don’t worry too much about which list to use. They are all similar anyway.
Not every original series episode is of the same quality as the very best episodes, which are some of the best hours of TV ever produced. Start there.
