Even Obi made a comment about Anakin's saber skills not being on Mace's level. He was regarded as being the best saber fighter.
no. He made a crack about being on Yoda's level.
Obi-Wan: "If you'd spend as much time working on your saber skills as you do on your wit, you would rival Master Yoda as a swordsman."
Anakin: "I thought I already did."
Obi-Wan: "Only in your mind, my very young apprentice."
Like I said earlier, there were only two people to had beaten Mace in a saber fight before episode III: Yoda and Dooku.

While yoda was teaching 5 year olds important lessons like - position of planets affected by gravity, yyyeessss (yoda voice), mace was practising the lightsaber in his room screaming "yes they deserve to die and i hope they burn in hell!"
Unfortunately, I think much of the mystique around how powerful Mace is has to do with Samuel L Jackson playing him
I realize he invented his own saber technique, but that still doesn't mean he is the best, just more creative than some. And if we want to be technical here, Yoda had mastered all VII of the saber forms, even Vapaad, however he specialized in Ataru.

Which book do you recommend as a starting point?

I have only read 8 of them. That sounds like a lot but there are so many that it isn't really. It depends on what your interest is in star wars as to what you should start with though.

Palpatine kills 3 Jedi in a few seconds and doesn't even take a swipe at Mace?
That part of the scene is terrible. Especially the weird grunt/trust thing Palpatine does with his light saber.
