Ya, I assumed it was brain activity too. Because you could just avoid the whole Matrix situation by cutting us off sooner, maybe even as babies, though that would lead to needing more quantity to make up for lost volume if it was just biomass they required.
And as mentioned, the Matrix was created because humans essentially failed to develop if not properly stimulated, which of course makes sense since proper stimulation leads to intelligence.

I think it's just something that you have take as part of the premise, and it doesn't necessarily make a ton of sense. The machines use humans instead of cows because otherwise there would be no story. That's it.

If you think too much into the Matrix it ruins it.

Agreed and I tried not to do that - too much. The Matrix (1999) is an excellent film with an intriguing premise.
