Actually they were speaking Sicilian not Italian and they were speaking so fast that they couldn't use subtitles.
In the book, after Michael returns to the table, Puzo says that Michael is not concentrating on what Sollozzo is saying: "It was literally gibberish to him". The use of the subway train tries to recreate that cinematically.

When Vito is shot there is poster for a Jake Lamotta title fight above the fruit stand. I don't think he won the championship until the 50s. So that would have been off as well. And of course De Niro would go on to play both men.

This is one of the things that has always made The Godfather I & II unique. The mob was very much still in power and influential in Hollywood. You had to very careful to remain respectful to Their Thing. Once they were taken down in the early '80s you began to see crap mob movies and caricatures appear.
