In fact, what force feats did Luke perform without being either walked through it, or formally trained?
Calling the lightsaber on Hoth is all I got. Even then, it took him several minutes and 3 tries.

That's not true at all. I believe it's heavily implied that Luke had known Obi-Wan for most of his life. He immediately recognized him when he's saved from the Tusken Raiders in the first movie.
