Honestly if you want to beat those guys you gotta outgrapple them or your striking skills better be on par with kickboxers such as Ernesto Hoost from many years back while having great takedown defense.
The only way to get those grappling skills is by getting coached by people who know their style wrestling/grappling. Gokor Chivichyan would be a great teacher/coach for grappling

Gokor has a Russian name but he trained under Gene LeBell who’s an American catch wrestling guy who learned from another American catch wrestling guy. At some point an American is going to move to Dagestan to train at Khabib’s gym and that’s pretty much the only way to get on that level. It’s as much the insane skill of their training room as it is a stylistic thing or coaching thing
