The ref was supposed to run in stride alongside Dak on the QB run.

From the moment Dak slid, it took the official 5 seconds to reach the ball, problem Dak and the fat offensive line was in his way.
Dude was booking to the ball...did all you could to set it...now if he was lollygagging down the field behind the play then the would be the only gripe, otherwise blame the play. Just because you got your team to the line doesn't mean you can just hike the ball yourself...the fact that the Cowboys didn't factor in the time it takes to spot a ball in their playcalling is the absurd part.

I have seen athletes and coaches talk about these last second plays and typically speaking after a play they want to have at least 10 seconds or more on the game clock in these situations. In addition to that you need to find the umpire and hand the ball to them. When Dak got up with seven seconds left it was an absolute crapshoot. Everything has to go perfectly right to work; it’s just too risky.
