Stanford plays pretty conservative in their play calling and they give Oregon more than they want to deal with every year

That's Dantonio's style. It's just who he is. He will take a risk when he needs to, and he doesn't think he needs to in the 1st quarter. He may be wrong tonight, but that's the way he plays; defense, special teams, timely offense
