Product change should affect your 5/24 because its not a new account.
Not sure what you mean about 5/24 being exclusive to Chase. If its about non-chase cards counting towards 5/24, then no its not exclusive. Any card on your personal credit report counts towards 5/24. If its about 5/24 applying to cards with other banks like amex or capital one, then yes its is exclusive to just chase. each bank has their own rules for signing up for cards, but 5/24 seems to be the harshest and only applies to chase cards.

csr will be hard to beat for no AF. if you value points, can spend $8000 on cards in the next 3 months, and haven't gotten the sapphire preferred yet, you should consider applying for both on the same day. chase has a rule now that you can only get 1 sapphire product at a time, but people have been successful in getting both by applying on the same day. the current signup offers are 60k points after $4k spend on preferred, and 50k points after $4k spend on reserve.
if you're looking for just a higher signup bones, ink business preferred has a 100k point offer after 5k spend if you go into a chase branch and meet with a business relationship manager.
hotel cards to consider would be the marriott cards because they are supposed to be going away this year, and the ritz carlton card because it comes with 2 free nights and a lot of useful perks.

if you do ANYTHING outside of your regular job to earn money that can count as a business. cut grass, dog sit, give private lessons, sell stuff on ebay, etc. even if you don't, there are plenty of people that claim a "business" on their applications and get approved.

Correct, they are checking your whole credit report for 5 new accounts over the past 24 months from any issuer.

All Southwest cards count against 5/24 including the business card so the second one would be 6/24 and deny.
HOWEVER, some people have reported success getting two cards applied for at the same time to approve when at 4/24. If you try this I would do it on two different browsers at exactly the same time.

I'm looking to expand my card options as well. I'm at 5/24 (so no Chase availability; already have CSR, CSP, United Explorer, Freedom) and got declined by AMEX (currently have the Platinum) for the EveryDay card (ugh). They said I haven't been a customer long enough to open a new one(?). I got the Platinum in December 2017, so maybe that's why.
I'm thinking about the Citi ThankYou Premier Card. Anyone have any advice on this card? Once I hit the minimum spend for the 50K points, I would use it as my gas card (3x points).

I earned and burned that card some time ago using the points as cash. Didn't feel like messing with their travel partners but someone willing to figure them out could go that route.

I've only been into this for a few months. Between things like mpx going away, Amex cracking down on MS and clawing back bonuses, and chase shutdowns all happening in the recent weeks, I have to wonder how awesome this hobby would've been even just a couple years ago when the banks weren't monitoring this stuff nearly this closely
