So, if he caught the ball and has possession while in the act of breaking the plane of the goal line, and THEN comes down and the ball moves a bit...wouldn't he have already technically scored as soon as the ball crossed the goal line, regardless of what happened after that?

I just watched the game again and I think it was a TD catch.
But, they've changed the "football move" and other silliness with the legal catch definitions so much in the last few years, who knows.
