Get some T-Posts, drive them down to about 3-4' high. Then run 2 or three strands of wire. Think of making a short barbed ware fence but not barbed. Then planting confederate jasmine (or something similar) along it and train it to grow on the wire. Do you think this will eventually become thick enough to trim with hedge clippers to make a nice solid 'hedge'. If not, is there something I could change? I have about 500' and that's a shite load of dollars in something like cherry laurel which I was thinking of doing initially.

Not related to the plant side of it, but hidden/concealed wires like that always scare me. Nobody would expect there to be wires/T-posts hidden inside a hedge row.

It will definitely work for your application. Obviously, the more vines you start with the sooner it’ll happen. I used 6 one gallon plants for a 36’ (8’ height) section of fence in my yard and only took 2 seasons (New Orleans) to completely cover it. Used screw eyes and 18 gauge steel wire to train it. In season 4 now and just had to cut it back by a foot+ after bloom and already looks lush again. Just make sure you properly prep the planting area and use some slow release granular fertilizer.
