I have a section in my kitchen similar to this:

I'd like to update the floors, but I'm not sure what I can do due to the angled cabinet and no gap at the bottom.. pull out the cabinets and put new flooring down (read this wasn't ideal) or something else..?

Pull the trim on the cabinet and cut new floors to fit around the base of the cabinet.

Pretty much this. You don't want to place vinyl planks under the cabinets. Just get them as close to possible to the cabinets, and the trim will cover up any gap when you reinstall them.

Appreciate the feedback!

I'll see if I can pop the trim part off and go from there. It's not as thick as what is pictured, but that looks like the best option.

Pop off that quarter round and cut the planks to about 1/4" from the edge of the cabinets.

I recommend a miter saw for the short cuts and a table saw for the longer cuts.

It's a lot quicker and easier to cut vinyl plank with a straight edge and a sharp utility knife

This entirely depends on the type of vinyl plank. If it has the cork backing, I'd go with the miter saw/table saw. And for cutting around corners, a jigsaw comes in handy. Those are the 3 tools I used when I redid my flooring.
