Have bought a TV in 15 yrs and am not much of a techie, so here goes. Need to buy a 65” TV that needs to be as flat as possible . Is there a difference in thickness in major brands?

The Sony's and Samsung's are pretty flat. I'm a Sony fan, however they are heavy if you plan to mount it on the wall.

They are all flat, some have better viewing angles.
They all are pretty thin, 1" thick or so.
You should be pleasantly surprised at the cost of TVs now. 15 years ago a 65 inch TV was probably 2-3000. Now you can find a decent one for under $500
