There are other factors to rigidity besides the spacing of joists. Span, size of joists, type of joists, type of subfloor, glued or not.
And I'll throw in that it is a common belief that walking on a wood floor system is easier on bone joints than concrete floors. IF that's true then logic would say that 16 is going to be more forgiving than 12.
Fyi, if you can get it, Advantech 1-1/8 osb flooring is fantastic. Don't confuse it with osb sheathing. The only similarities is they both Orient the Strands of wood the same way. Thats where the similarities end.
OP needs to lean on his builder that he hopefully hired because he's competent.
