Had a large water oak fall and now have an area that gets good sun that I had written off. Is it too late for grass seed?

Worth a shot. Might have to lime it. Also you might be filling that area for a while and always adding sand.

I’d wait and concentrate and leveling ground first

How big of an area? I agree the area will settle and need fill but if you want you could plant rye grass seed (annual or perennial) now just so you don’t have a mud pit during the winter. It will die in the heat of summer - next May or so. During the winter continue to fill low areas with suitable fill dirt and consider sodding the area next spring.
ETA: Perennial rye also dies in the heat of summer here but it doesn’t grow as tall as annual rye so you won’t have to cut it as often.

Area is pretty big. 40x40ish. It’s not just the trunk/root ball it’s the area where grass would t from due to too much shade. Will check rye out. Is sod possible now?

Sure - honestly in S LA sod can be laid year round if required. I laid a 1/2 pallet of centipede last Oct (early Oct) in an area where I had a tree removed and it looks great. It rooted in well before it went dormant.
