Keep the soil drained.

We did sweet potatoes a few years ago, zone 8, full sun garden plot, they did great. One thing to remember is after you harvest them, they have to cure for a couple months in whatever you can call a "root cellar" around your house somewhere, or they won't taste very good.

By the way, you can take a sweet potato and slice it into 100 little chunks and plant 100 of them.

I did the same thing a few years back. Ended up with a nice crop of taters, although my heavy soil meant that the potatoes were a bit misshapen and twisted. Also had some sort of burrowing critter ravage about 20% of them. It was pretty amazing to get a big crop out of one lone potato.

Beware of the La Dept of Agriculture showing up at your house with a fine and order to destroy the planting. Why? Anyone planting sweet potatoes must first contact the Dept of Ag to register their site, pay a fee, and have a potato weevil trap posted nearby.

Not kidding. I know a guy that planted some and they showed up and ordered him to disc under everyone of them.

this thing might swallow my carport before the roots are ready to dig up.

I meant to post something about that earlier. The vines, while pretty, go everywhere. They took over a huge chunk of my garden a couple years back. I quit planting them because of it.

Did you ever try eating the vines? They are edible.
