I know along my fence where I will spray roundup, often everything dies but the doveweed remains in the bare dirt. Not sure if it just bounces back that fast, or if roundup doesnt always zap it.

In addition to using the high rate (3.2 g/1000 sq ft) make sure you are adding surfactant - couple teaspoons per gallon. Doveweed has a waxy leaf, the surfactant is required for maximum uptake of the herbicide.

All systemic herbicides of which Celsius is one usually take 2 to 4 weeks to show good results - usually temperature dependent.

ETA: Also remember mature weeds frequently multiple herbicide applications to kill them, and when Doveweed is producing the small purple flowers it’s mature, so as ronk said spray it again at an appropriate interval.
