Some do, and many use that sensor to tell the tankless unit when to come on which can also be a disadvantage of any tankless water heater. They have a minimum GPM flow rate at which they activate in addition to a maximum flow rate they can achieve the desired temp delta. Some shower manifolds with built in thermostatic protection don't get along well with tankless units.

I need to replace my 20 yo standard electric unit at my camp. I’m looking at the tankless to save space and bc it’s just not used a lot.
