Ubuntu Studio 11.04. I tried to switch to 64 Studio not long ago, but I could never get it to install, sadly.

I don't think the screenshots from the link do it justice. It's pretty sleek/shiny looking (especially compared to the purple/orange standard theme).
I switched to it because it had all sorts of music tools (and a low/zero-latency kernel, if you're into that sort of thing...and it's stable, I've never experienced any goofy crashes/etc because of it). You can plug the theme in without bloating your machine with software you don't want pretty simply:
sudo apt-get install ubuntustudio-desktop
Or, if you're into this sort of thing, the source packages for the US 11.04 "look" are here
