I did a search and found some threads mentioning go-to meals and such, but no dedicated recipe threads. I figured would be helpful for everyone not looking to re-invent the wheel, so here goes…
Please share some recipes you enjoy and— if possible— include some preparation tips/details and nutrition info.
I’ll go first. The beef I use in this is the pre-cooked, sliced, grass-fed sirloin from Costco (pic below), which is convenient to have around for quick meals. You can certainly use any steak or other protein you prepare at home, but that will obviously change the nutritional breakdown.
Quick Steak Quesadilla (1 serving)
-6 ounces pre-cooked grass-fed sirloin, broken down into smaller slices
-1 large carb balance wheat tortilla
-1/2 cup chopped white onion
-1/2 cup chopped bell pepper
-3/8 cup Sargento shredded cheddar jack
-2 tbsp Mrs Renfro’s green salsa
-1 tsp salted butter
1. Cook down the onion and bell pepper in a large non-stick pan. I don’t use oil for this; just cook them down and get them a little soft.
2. Add onion and bell pepper to bowl and mix in the salsa. Return the pan to the heat.
3. Butter one side of the tortilla and place in the pan, buttered side down.
4. Add the chopped steak to the tortilla, and spread evenly, followed by the onion, bell pepper, salsa mixture, then top with the cheese. Cook until cheese begins to melt a bit and the tortilla starts to crisp.
5. Fold the tortilla over itself and use your spatula to gently press down a bit on the top to get it to bind. Push any escaping filling back inside. Flip and repeat.
6. Plate and devour.

Oh yeah. I do something similar to this on the blackstone.

I’ll add another quick, easy one. The avocado is a fantastic sub for mayo in a traditional chicken salad. Sometimes I add a few pecans or walnuts, and usually I pre-toss the lettuce with a touch of Good Seasons Garlic Herb dressing— which will all obviously impact the nutritional info below
Avocado Chicken Salad (1 Serving)
-2 packets Fresh Additions Pre-Cooked Chicken Breast Bites (Costco), diced @ ~1/4”
-3 medium mid-boiled eggs
-1/2 medium avocado (soft, ripe)
-2 tbsp red onion, diced
-3-4 cups chopped romaine or green leaf lettuce
1. In a bowl, mix and mash everything except the lettuce. Add salt and pepper to taste (if necessary).
2. Create your bed of lettuce in a larger serving bowl, spoon the chicken salad on top of the lettuce and serve.
