Best public course I've played is probably Bethpage Black
Some courses/cities for you to consider are.
Cleveland, OH
i'll second Sleepy Hollow in Brecksville, OH. Fantastic muni where the phrase keep it below the hole rings so true. Other Cleveland area courses I've played and would pair with SH are Fowler's Mill outside of Chesterland and Windmill Lakes in Ravenna. A tree lined course thats well maintained and right in front of you, no tricks.
Oklahoma City, OK
Lincoln Park East/West. OKC has 3 36 hole muni facilities and Lincoln Park is the oldest of the three. The East course is good but you should play the West. Nothing overly special about LP, just a well maintained seasoned golf course. Other OKC options are- Lake Hefner North/South(North is tougher), The Jimmy Austin OU course in Norman. Kickingbird, a muni in Edmond and Roman Nose State Park in Watonga. Rattlesnakes and canyons and serenity there.
Dallas
Ive played Stevens Park, a muni on the outskirts of Downtown Dallas. SP is a tight, wonderfully routed course through a neighborhood. It has some square greens on the front and a photo op view of downtown off one of the tee boxes on the back. DOn't know any other dallas tracks.
Honorable mention goes to Memorial Park Golf Course in Houston. I believe it hosted a PGA event back in the day. Another seasoned frequently played course.

If you’re wanting to head to PNW there is a course called Salish Cliffs. Google it. One of the best kept secrets in the golf world.

The responses in this thread are awesome. Chicago is almost always a $100-200 flight from KC. I'll have to do this. Almost like you're talking from experience...

If you do want to go out West and play golf in and around the Monterey peninsula, which is golf mecca no matter what anyone else says, do the following (but you have to be flexible with time of day):
Play either Bayonet or Black Horse using golf now. A great value on very difficult courses with view of the Ocean all around you. F their greens.
Play Pasatiempo but get on their website and find a discounted fee for around $175. They usually have a few tee times a day at that rate.
Then play either Spyglass or Spanish Bay at twilight, 225 or 165 respectively. As long as you get there right when twilight starts, you will be able to finish (especially at Spanish Bay where there is no one on the course late afternoon).

Won’t be this trip, but I’m doing this late summer for sure. I got engaged in Big Sur. Love that part of the country!
