If you go through Amazon or somewhere that doesn't charge you until the game ships, you will not have access to the old game until you receive the new game.
If you don't want to pre-order at all, there will be a promotional window when the game releases that will allow copies bought then to also get The stick of Truth for free.

Do you get a hard copy of the game this way or just a download code as well? (When pre ordering through PSN?)

Through PSN you'll get a digital copy. There's no code it's automatically added to your downloads after you checkout.

Bumped to announce game is delayed. In short, game will release in Ubisoft's next fiscal year which runs from April 1, 2017 to March 31, 2018. No set date provided yet.
