Not that much you can do in NG if you're at the end. I printed off the ring and gesture guides from Fextralife and marked them off as I went. Try to do as many of the questlines in NG+ as possible, so you only have to worry about the rings in NG+2. Just make sure and double check the rings before going to NG+2, because I still accidentally missed a few and ended up having to beat bosses again to gain access to them.

alright, I'm working on maxing out all of the covenants before I go into NG+ . That way I only have to focus on questlines and rings from that point on... How many gestures are locked behind NG+?

None of them are, but you have to complete certain things in order to get gestures from NPCs, i.e., summoning Yellowfinger in Farron Keep.

I got the eyes you can give to the fire keeper. After talking with her I'm guessing this is how you do one of the possible endings I keep hearing about. Does giving her the eyes greatly affect the current play through or just the ending you get?

It just gives you the option for the 'dark' ending.

interesting... now that I've seen your post, I now know why I suck at PvP... I never put Luck with my Uchi dex build... but then again, I could have cared less about PvP, and just built whatever I wanted to, to have fun
I mean, I'm about to finish up my first ds3 play through with having never even pulled out a shield, but on one boss, why? because I am a masochist.. that's why!
