It's made me pull back and rethink my designs. My old reliable interstellar rocket no longer can achieve orbit due to spinning apart on launch.

You stopped funding the kerbals space program. What do you expect with those policies? It is a ghost of its former self.

I tried to jump in and play career. I can do suborbital stuff with the early equipment, and brute force made orbit a few times, but man, flying those things is a b*tch.
I'm going to go back and work on flying in sandbox. I know the game is famous for its brutally steep learning curve. I've got the hang of basic maneuvering with light payloads (basically, just the command module and I've taken the science module up a couple of times, too) - and even throttling and whatnot. But, I'm still a ways from closing orbit, RCS, and things like that.
And, I guess, in sandbox I can try some space planes, too.

ETA: I am assuming you have one of these. Makes delivering kerbals to space much easier and can be used as a dentist chair.

I've been playing for two years and still can't dock
Land on distant planets: check

Same. I've docked once and I have no idea how I did it because every time I try to now I frick up badly. Once you get docking down, you can do pretty much whatever you want to after that

I got pretty good at it by learning how to use the grappler and going after asteroids.

Best thing you can do is go into sandbox and practice with unlimited fuel and RCS. I basically made a big millipede because I kept launching and adding ships to the same orbiting structure to learn renedevous and docking. Slowly started attempting it with fuel and RCS on til I had it some what down. It's definitely still a big weak point for me.

That's why doing the asteroid rendezvous are good training. Huge objects, rather simple orbits. Not many other moving parts.

Me either. I'll finally be able to build an outpost around Jool/Laythe. I have never visited Eeloo before and I feel like that would be a good pit stop to get some fuel on the way there and on the way back.

Docking is not terrible...took me an eon to figure it out...but now I can line up my ports with the best of them.
I'm still struggling with the new physics. I can get rockets up and out but they suck all my fuel away. Still working on an efficient interstellar design that I don't have to refuel once I achieve orbit.
