I took over 2 counties next to me. the folks that took the main part of it are people in my court. not vassals.
I wanted my dude to take it but he didn't. Why not? Also, should I be trying to hold as many as I can personally? Or, should I not care who has it as long as it falls under my coat of arms?

Did they have claims? If you press their claim and they are not either your dynasty, already a vassal, or the title is the same tier as your own, then they will end up being independent.

You will have a demesne limit based on stewardship, government rank, and some diplomatic tech that I can't recall.

Always good to have family members hold titles, but it can be problematic if they have claims on your own title.
Are the two new counties independent or your vassals?

So I took province next to me that is part of de Jure duchy. I can't afford the duchy of mide title bc I don't have 189 gold.
But more importantly the vassal of that province is still the old bishop leftover from previous owner. Of course he hates me so I don't get his taxes.
I revoked his title but can't figure out how to award someone else the title? Thanks for help

Find someone in your court with your culture and religion, preferably with the trait 'content' and definitely not 'ambitious'. If possible, select one with virtuous traits and a learning education, as they may become a Cardinal.

You don't have to, but it is preferable.
Find one of the landless courtiers in your court. Right click and select 'grant landed title'. Should pop up.

Ok thanks at .7 monthly income it'll take forever to afford the duchy title. And I got fricking small pox so my damn gluttonous deceitful cruel son may get it. I wish he would die so my quick Midas touched son would be heir

I had an heir once that was a dwarf, cruel and shy. I legitimized one of my bastards and he became my heir. Needless to say, my dwarf heir tried to have me and him assassinated a few times

When I say my coat, I mean the kingdom/duchy coat. I'll click the county and it'll have his coat first (his coat over County) but then to the right it has my coat

You basically just gifted counties to those guys, unfortunately. You'll have to fabricate a claim with your chancellor or get a claim via marriage to control them.

Basically, you have to declare war on the person with a personal claim (pretty much only made by a chancellor with the mission 'fabricate claim) or with a de-jure claim on it as a duke, and even then they will just become your vassal.

Not all the time - there are situations where watching your potential claims can pay - yesterday, I was building up from Dublin (late 1066 start) - and after a change of ruler - I had an elder son with a daughter, and the heir was the younger brother (elective monarchy) - before I kicked up the demense limit, I created 1 Duchy(Petty Kingdom) and had the brother, the heir over the surplus county as a vassal. I looked and found that, somehow, he (the heir/vassal count) had a weak claim to a neighboring county - so I was able to declare war, as a duke (petty king), on behalf of a vassal count at the same level. Now, the heir gets the county, and he is a 2 county "heir" vassal under my current ruler. I don't have enough boys in the dynasty right now, but at least there is a predictable line towards making the Kingdom of Ireland by 1120 or so under my current dynasty (if I can make some more money).
No, before I knew what I was doing, I would pursue claims for unlanded members of my court - that just replaces 1 independent count with another, unless you also have a de jure claim over the county as a duke or whatever. Now that I know how to screen for potential claims, and know the best one to pursue - things are going much better.
But, the money thing - that is the headscratcher - I'm always broke, even with 5 counties in the demense (although that's getting a little better). Marrying into Philippe's family was problematic - I keep getting drawn into French wars that my inlaws lose - I even tried to help once, but to no avail.
On the other hand, William the Conqueror (my father-in-law) sent a 16000+

One minor complaint, the marriage system is a bit broken. I am a minor Irish chieftain, my son shouldn't be able to marry princess of Byzantine and my daughter shouldn't be able to marry the prince of Lombard etc. they need to refine that system.
One funny note though is my son married the princess of Byzantium and I checked her traits and stats when betrothed all very good. Right after we agree to marriage turns out she's a lesbian! She better put out a little I want some grandsons!

I agree - even if it is a 1-up, 1-down rule, that would probably fix it. Daughters of counts ought to be able to marry sons of mayors/barons, counts or dukes, and so forth.
