any ideas how to cook this except with boneless chicken breast?

I tried that. Didn't work quite as well in the pan cooking the pesto side down first, as does fish prepared this way. I've baked it with the pesto side up and it was acceptable, though I'm not a chicken fan, others like it.

ive dont pesto and panko bread crumbs before. The recipe called for mayo to use to keep the outer crust on. i used a light egg wash instead. it worked out pretty well.
