Ate an outstanding meal in Louisville at Hoki A Mon. They are a fish market as well.
Ate Yellowtail collar with grilled veggies. Had a few glasses of Hana fuji apple infused saki to accompany. If you've never ventured into new types of seafood to enjoy, do yourself a favor and try it.

Collars, "Throats", and cheeks make for wonderful bits of fish.

They have it most sushi restaurants. So many different textures and taste of the meat in that portion of the fish.
