i have a batch of homemade blueberry wine that has a pretty good taste but it's a bit too sweet for my taste and the alcohol content is too low - which affects the taste/mouth feel. it already has potassium sorbate added to it for stabalization so re-fermenting it is not possible. how can i get the alcohol content up and decrease the sweetness?

Make another batch that’s to your liking and then blend?

How much volume are you talking about?

And you absolutely can restart fermentation after sorbate with a large pitch of fresh yeast, activated in a liquid starter.

But with all that hassle, just make another batch.

With your old batch, just spike it with a really smooth vodka and let it age a little longer.
