I toyed with the idea of a food truck once upon a time, and I decided that between this and the constant maintenance of a truck that seems to always have something wrong, that it wasn't worth trying to do even as a part time job.

Same, 20 yrs ago Mrs Perple went to culinary school. We looked at a couple awful trailers for sale, business plan, local ordinances, etc, etc. She stayed with her corporate job and we never looked back. It’s easy to say their prices are high but that’s a tough business model that only gets more crowded.

Friend of mine has one of those small delivery vans he uses for his daily driver and a few times a month does pop ups out of the back with his pizza ovens. Tent, couple tables, ovens and a chair with the back doors open. Ball games, parades, festivals etc…he makes a nice little chunk of change and enjoys doing it. Low cost. Really good pizza too.
