Hard to explain, it didn't taste like "boudin". They put a lot of their special seasoning in it, because it tasted exactly like the stuff that was on the cracklins. I'm not a person who likes a lot of liver in boudin but I think there should be a hint of it but this didn't have any real defining taste of any sort of pork to it. It kinda tasted like boiled meat & rice with a lot of their blended seasoning mixed in it. The color was weird, it was whitesh???
