White Beans Wednesday

I meant to put a pound of beans to soak overnight but forgot and realized I hadn't at about 5:30 this morning. I got up and put them to soak for cooking later this morning.
Diced up an onion and two toes of garlic and sliced up the meats. A pound of pickled pork and a pouund of French Settlement andouille.



I started the cooking by first browning the pork a bit then added the andouille.



Then removed those and Sweated down the onions and some celery and the garlic. Added some savory leaves, bay leaves and a couple of other spices then put in the beans and water and added the meats back to the pot. Simmering right now!



Smelling fantastic! I might paneed some pork loin chops to go with tonight for dinner.

Holy shite that looks good. White beans and rice is one of my very favorite dishes I hardly ever get to eat. You simply can't find any decent sausage here in the Bay area.

Fried fish. White beans require a side of fried fish.

I paneed some thin sliced boneless pork loin chops to go with the beans.




Time to eat!

I rather white beans over red beans and those look good.

That looks delicious. I just use salt meat in mine and I also grow and pickle my own jalapenos that I dice up and throw in there for some added heat. I always fry fish and shrimp to go with them.

looks great... I like to spoon the white beans over crumbled corn bread instead of rice.
