I don’t believe I’ve ever had crappie. But walleye has a very mild yet distinct flavor. It’s almost nutty. I haven’t come up with a better adjective to describe it. Maybe earthy, but that doesn’t seem like a good way to describe the flavor of a fish. I don’t dress it up much because I don’t want the flavor to get lost. The traditional way my family prepares it is to dip the fillets in egg wash, coat them in cracker meal, and pan fry them. And then just eat them like that. I don’t even add tarter sauce. A spritz of lemon juice is okay but I generally don’t even bother with that. We always had sides of home fries and cole slaw. We used to spend a week fishing in Quebec at a beautiful place called Lake Kipawa. That would be our meal every night.

I used to be able to buy boxes of cracker meal in the grocery store but I never see those anymore. Now I just buy Ritz crackers and pulverize them in a plastic zip lock bag. I use a bottle of hot sauce like a rolling pin to crush them. When I’m cooking for myself I’ll replace the cole slaw with broccoli or green beans because most of a head of cabbage would go to waste if I made slaw.
